Blueberry French Toast

Happy Monday!

Well, I ended up switching the order of my meals a little bit. However, here’s the recipe for Blueberry French Toast Casserole to kick the week off.

What you need:

Casserole:
1/2 loaf of French bread, cut in 2 inch cubes
4 large eggs
1 1/2 cups of milk
2 teaspoons sugar
2 teaspoons vanilla
2 Tablespoons of melted butter
Cinnamon-sugar

Topping:
1 cup blueberries
2 teaspoons butter
1/2 cup maple syrup

Spray an 8×8 casserole dish well. Place bread cubes in the dish. Beat eggs, milk, sugar, and vanilla, and pour over bread. Cover and refrigerate overnight, or for 2-36 hours. Bake uncovered at 350 for 45 minutes. Remove, and cover with melted butter and cinnamon-sugar. Bake for 5-10 more minutes.
In a skillet, cook blueberries in melted butter for 3 minutes. Add syrup, and bring to a boil. Serve warm over the French toast casserole.

This was yummy, and I’m always a fan of breakfast for dinner! Of course, you could serve it for breakfast or brunch as well.
